Gnocchi di pane Recipe

Northern Italian bread dumplings.

The Ingredients:

~   500g Stale Bread – Soak in Milk until soft

~   2 Eggs

~   75g Grated Parmesan

~   Nutmeg to Taste

~   Salt to Taste

~   White Pepper to Taste

~   50 g Smoked Turkey or more traditionally, prosciutto or mortadella

The Method:

  • Combine everything and add breadcrumbs if necessary to make a dough that you can form into largish dumplings.
  • Steam or boil in salted water for 20 minutes.
  • Drain and serve with ragu!
